INGREDIENTS
- ½ tsp. salt, divided
- ½ tsp. garlic powder
- 1 lb. boneless skinless chicken breasts
- ½ c. BBQ sauce, divided
- 2 large sweet potatoes
- 1 large yellow onion
- 2 Tbsp. olive oil, divided
- ½ tsp. chipotle powder (or chili powder)
- 1 head broccoli
- salt
Instructions
- First, In a medium bowl, whisk together olive oil, lemon juice, garlic, and seasonings. Reserve ½ c. of marinade; set aside.
- Then, Toss chicken with mixture until thoroughly and evenly coated.
- Cover bowl with plastic wrap and let chicken marinate at least 30 minutes.
- Preheat oven to 350 or preheat grill to medium high.
- Prepare grill by lightly oiling the grates or oiling the grill pan over stop top. Set heat to medium high.
- Grill the chicken, basting with reserved marinade and turning so each side browns and has grill marks. Grill for approximately 15-20 minutes or the internal temperature of the thickest part of the breast reaches 165 degrees F.
