INGREDIENTS

  • ½ tsp. salt, divided 
  • ½ tsp. garlic powder 
  • 1 lb. boneless skinless chicken breasts 
  • ½ c. BBQ sauce, divided 
  • 2 large sweet potatoes 
  • 1 large yellow onion 
  • 2 Tbsp. olive oil, divided 
  • ½ tsp. chipotle powder (or chili powder) 
  • 1 head broccoli 
  • salt 

Instructions

  1. First, In a medium bowl, whisk together olive oil, lemon juice, garlic, and seasonings. Reserve ½ c. of marinade; set aside.
  2. Then, Toss chicken with mixture until thoroughly and evenly coated.
  3. Cover bowl with plastic wrap and let chicken marinate at least 30 minutes.
  4. Preheat oven to 350 or preheat grill to medium high.
  5. Prepare grill by lightly oiling the grates or oiling the grill pan over stop top. Set heat to medium high.
  6. Grill the chicken, basting with reserved marinade and turning so each side browns and has grill marks. Grill for approximately 15-20 minutes or the internal temperature of the thickest part of the breast reaches 165 degrees F.
